Olio Extra Vergine di Oliva EVO

On this gentle hill at 450 meters above sea level, dominated above all by the varieties of Leccino, Moraiolo and Frantoio, Santo Stefano Oil is born.

What we like most is its intensely fruity, elegant and enveloping aroma, which is expressed in the mouth with fine aromatic notes, such as the aromas of broad beans and rocket and a delicate bitter hint of artichoke.

The harvest is still done by hand during the month of November, and the olives are taken to the mill for pressing within 24 hours.

The pressing with cold extraction and the incomplete maturation of the olives give this olive oil a marked taste of fresh and slightly spicy grass and an intense bright green color with crystalline reflections tending towards gold.
Hand picking is still allowed today to local pickers who take care of the olive grove granted to them with attention and respect throughout the year, from pruning, to harvesting, to obtaining their own oil.

Conservation in the company takes place in stainless steel tanks, only after a careful filtration process which allows us to keep all the nutritional properties intact, guaranteeing the balance between antioxidant defenses and the production of free radicals of this high quality extra virgin olive oil, for at least 2 years.

Our Extra Virgin Olive Oil is not only tasty but also good for your health, as it is rich in polyphenols, vitamins, tocopherols and antioxidants. Thanks to its strong and fruity flavour, it is fundamental in Tuscan dishes such as “fettunta” (a slice of Tuscan toasted on embers and soaked in fresh oil made from unripe olives). The Extra Virgin Olive Oil is produced by cold pressing the Frantoio, Moraiolo and Leccino olives. We have approx. 4,000 plants, spread over 20 hectares of land at 450 meters above sea level. Harvesting takes place exclusively by hand in the month of November. The olives, on the same day they are harvested, are transported to the mill, to be subjected to meticulous pressing and kneading. The last step is the cold extraction of the oil.
