Chianti Classico DOCG
Our Chianti Classico D.O.C.G. Santo Stefano di Annata is a graceful wine, particularly fresh and balanced on tasting. It stands out for its drinkability, dry and slightly tannic, it refines over time. It expresses notes of red cherry, as well as a floral scent of roses, accompanied by notes of wild mint and cloves; It harmonizes with ultra-fine tannins, fresh acidity and minerality typical of our marl soils, so as to offer a balanced and soft wine, with a fresh and clean finish. Brilliant ruby red colour. Its versatility allows this wine to be paired with dishes ranging from meat to oily fish and therefore its freshness allows it to be accompanied with various dishes. Excellent combined with Florentine steak, but also with tomato sauces, white bean soups, other typical local dishes such as Florentine tripe, lamprey in green sauce or in inzimino. Serve at a temperature of 16°-18°C.
Drugo Riserva
Wine produced with grapes mainly from the vineyard called “Querceto” at 375 meters above sea level of our property. The Riserva DRUGO DOCG it is a full-bodied, well-structured wine which, in order to regulate, is aged for 24 months in oak barrels. The Drugo it has complex characteristics, a fine but intense bouquet with spices and wood aromas that intertwine with evolved and ripe black fruits, such as blackberry, blackcurrant and cherry. It has an intense and full fragrance as the olfactory profile is persistent, with a grassy and spicy taste, it can vary from black pepper, to rhubarb, to a touch of laurel and cardamom. Garnet red color with intense purple reflections. A wine certainly of character and depth, particularly round and with a long finish, with balanced acidity and robust tannins, even in difficult years. Its bottle aging potential is 7-10 years and beyond. Our advice is to combine it with hearty dishes such as fresh egg pasta with beef and beef ragù, but also potato gnocchi with wild boar ragù, or baked lasagna, risotto with truffles or with fresh seasonal mushrooms, and polenta with ragù. Excellent with very seasoned pecorino cheeses, Tuscan salami, finocchiona or roasts with baked livers. Serve at a temperature of 18°-20° C.
Gran Selezione
Chianti Classico D.O.C.G. Gran Selezione, a wine produced from a single vineyard called “Sobole” and from a careful selection of the best Sangiovese grapes owned by the company. It has a beautiful intense ruby color, it has a floral bouquet that alternates lavender flowers with wild violet, from hints of cedar to a variety of dark fruits such as aromas of blueberry, blackberry and blue plum. On the finish mentholated notes. On the palate it is a structured wine with great personality, with a dense and concentrated texture and the tannin closes the sip in a sweet and composed way. With its thick and substance-rich skin, Cabernet Sauvignon gives this Gran Selezione great refinement capabilities. Our advice is to combine our Gran Selezione Fattoria Santo Stefano with stewed stews such as hare cacciatore with olives and larded roasts. Serve at a temperature of 18°-20° C.
Rosato
Rosé from our lands, it has a clear, powerful, intense cherry colour. The vinification takes place with the salasso technique.
A fresh wine of Sangiovese grapes removed from the skin after pressing and fermented in white; pleasantly alcoholic, lively, easy to combine and suitable for hot summer occasions. It is served at 18°C and has a beautiful clear and bright pink colour.
It differs from classic rosés in terms of structure and alcohol content (13%). In fact, the idea of the rosé comes from the need to satisfy the customers of the agritourism in the summer with a wine that is fresh and refreshing and at the same time full-bodied and alcoholic. Pairings: excellent as an aperitif in the summer with dishes based on fish and shellfish, tomatoes and fresh cheeses, such as ricotta and mozzarella. Also perfect with Tuscan ham and melon.
Bianco Toscano IGT
Tuscan white, typical geographical indication, vinification in stainless steel. The pleasure of drinking a good white even in the land of Chianti thanks to the Trebbiano grape expertly combined with aromatic and fruity grapes such as Malvasia, Sauvignon Blanc or Chardonnay. Our white has a dry and pleasant taste.
Vinsanto
Vin Santo (or vinsanto) is a tipical special type of dessert wine. This traditional Tuscan wine is a sweet wine from Malvasìa grapes. It is accompanied by cantucci, typical Tuscan biscuits. At the end of September the harvest of the c.d. “chosen” the best bunches; then we proceed with the withering by placing the “penzoli” (perfect bunches with twigs), in a dry room for about 3 months. In December before Christmas, hence the name Vin santo, it is vinified by pressing and then placed in 100 liter chestnut or cypress wood barrels called “caratelli” closed with cement, where it remains for at least three years in a so-called environment to “roof” that is subject to continuous changes in temperature which favor the formation of the typical aromas and flavors of vin santo.
