Chianti Classico D.O.C.G. is our wine produced from 100% Sangiovese grapes harvested by hand in the month of October. With a fruity and softly dry flavor, with a good acidity typical of the vine and a moderate alcohol content of 14% vol, it goes well with any type of Italian dish.

Drugo Riserva

Chianti Classico D.O.C.G

It comes from the best choice of Sangiovese, Cabernet-Sauvignon and Merlot grapes, from a vineyard located on a hillside called “Querceto”. The south-west exposure and gentle ventilation allow for perfect ripening of the grapes which in October after careful hand-picking, hence the “Cru” character, are vinified in a 6,000-litre oak vat at a controlled temperature . In January, it is placed in 2,500 liter medium toasted oak barrels, where it ages for another two years; it remains 6 months in the bottle until it is placed on the market. The name Drugo derives from a use still prevalent in the Tuscan peasant jargon to indicate the strong and courageous, solitary man, therefore, synonymous with power like the strong and unforgettable personality of this wine.

Gran Selezione

Chianti Classico D.O.C.G

Gran Selezione Chianti Classico D.O.C.G.: a blend of selected grapes of 90% Sangiovese and 10% Cabernet Sauvignon; it is a wine with a taste of red fruit with notes of raspberry, which meets the gentle aroma of wild lily flowers, fine and elegant with a pleasant alcoholic structure. The patiently selected grapes are placed in concrete tanks for alcoholic fermentation only, then the vinification takes place in wood and then ready to refine in French oak barrels for 30 months, until bottling.

Rosato

Rosato Toscano IGT 2021

Rosé from our lands, it has a clear, powerful, intense cherry colour. The vinification takes place with the salasso technique.
This wine differs from the traditional rosé in its structure and alcoholic strength of vol.13%. The need to satisfy our customers in summer with a fresh wine with a full-bodied alcohol content was the inspiration behind the idea of producing a rosé wine.

Compared to the Bianco Toscano IGT it is distinguished by a higher alcohol content and body.
The body, structure and an excellent acidity are indeed those obtained from the Sangiovese grapes we use for our Chianti Classico. After the traditional pressing, the wine is separated from the skins (using the “salasso” technique) and fermented (in white version only with the juice of the Sangiovese grapes) completely in stainless steel tanks. The wine is bottled in March/April for sale at the beginning of summer.

Vinsanto

Vinsanto di Chianti Classico D.O.C. 2011

Vin Santo (or vinsanto) is a tipical special type of dessert wine. This traditional Tuscan wine is a sweet wine from grapes Malvasìa bianca. It is accompanied by cantucci, typical Tuscan biscuits. At the end of September the harvest of the c.d. “chosen” that is to say the best bunches; then we proceed to the withering by placing the “penzoli” (perfect bunches with twigs), in a room on the roof for about 3 months. In December before Christmas, hence the name Vin santo, it is vinified by pressing and then placed in 100-litre chestnut or cypress wood barrels called “caratelli” closed with cement, where it remains for at least 5 years as to be regulated in a cool environment with sharp changes in temperature which favor the formation of the typical aromas and flavors of the vin santo.

Grappa of Chianti Classico is produced from the distillation of the pomace of Chianti Classico and is among the typical Tuscan products offered by Fattoria Santo Stefano. Grappa is a pomace brandy obtained from grapes produced and vinified exclusively in Italy, distilled in Italy.

Extra virgin olive oil

Our Extra Virgin Olive Oil is not only tasty but also good for your health, as it is rich in polyphenols, vitamins, tocopherols and antioxidants. Thanks to its strong and fruity flavour, it is fundamental in Tuscan dishes such as “fettunta” (a slice of Tuscan toasted on embers and soaked in fresh oil made from unripe olives). The Extra Virgin Olive Oil is produced by cold pressing the Frantoio, Moraiolo and Leccino olives. We have approx. 4,000 plants, spread over 20 hectares of land at 450 meters above sea level. Harvesting takes place exclusively by hand in the month of November. The olives, on the same day they are harvested, are transported to the mill, to be subjected to meticulous pressing and kneading. The last step is the cold extraction of the oil.
